When eating the first kazayis of hamotzie the first night of Sukkos (it is not enough to think the following when making the beracha of laishaiv baSukkah), a person should have in  mind that he is fulfilling HaShem’s will, the commandment to eat in a Sukkah,  specifically the first night of Sukkos ; and that the Sukkah is a reminder of  yetzi’as Mitzrayim; and a reminder of the clouds of Glory surrounding B’nei Yisrael in the dessert protecting them from harm; and some say a reminder  of the actual booths that B’nei Yisrael dwelled in, in the dessert, also protected by HaShem.

He should think these thoughts whenever he enters the Sukkah to perform the mitzvah, all 7 days.
