The Mishneh Berurah says that it is proper to say baruch she’omar while standing. No reason is given.
Tradition has it that this beracha was found on a tablet that fell from shamayim. It is thus a prayer made in Heaven, presumably enveloped with a special kedushah. It is deemed preferable to stand to show respect for the source of the beracha.
