If a person started saying “shalom rav” instead of “sim shalom”, if he did not yet say the shem HaShem at the conclusion of the berachah, the Bi’ur Halacha concludes that he should begin again, saying “sim shalom”. If he said the shem HaShem at the conclusion of the berachah already, he should just continue.
If he began to say “sim shalom” instead of “shalom rav”, he should just continue on.
